I love Baked Beans, particularly if they're homemade. But the real homemade beans take forever to make, particularly if you start with the dried beans. I've got an easy way that's almost as good as the real thing though. Try it!1 large (55oz) can baked beans - I use B&M brand1. Empty the baked beans into a large mixing bowl and spoon through them, removing all the pieces of fat and discard.
2 onions, peeled & cut in fine dice
2/3 cup Grandma's black molasses (no substitutes)
2 Tbsp Dijon mustard
1/2 cup beer
6 slices raw bacon
Pre-heat oven to 350 degrees. Lightly spray a 2 quart casserole with vegetable oil spray and set aside.
2. Then add the onions, molasses, mustard and beer. Stir gently - gently - to mix everything together. Then pour into the prepared casserole dish. Lay the raw bacon slices on top of the casserole. Bake in the 350 degree oven for 1 hour or until the beans are bubbling and bacon lightly browned.
Note: to reduce the fat in this dish, you may leave off the raw bacon in the beginning. Toward the end of the baking time, fry the bacon in a skillet until lightly browned. then blot with paper towels and then lay the cooked bacon on top of the casserole about 20 minutes before it's due to come out of the oven. This will reduce the smoked flavor of the casserole, but it will considerably reduce the overall fat content.
